Ginger Cake with Yogurt Recipe
Ginger cake with yogurt is an easy and delicious dessert that can be enjoyed as a snack or a light dessert. - 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 teaspoons ground ginger
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup plain yogurt
- 1/2 cup molasses
Instructions:
Preheat oven to 350 degrees F. Grease and flour a 9x13 inch baking pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground ginger. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time until well combined. Beat in the yogurt and molasses until combined.
Add the dry ingredients to the wet ingredients and mix until just combined. Pour the batter into the prepared pan and spread evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan before serving.
Notes:
If you don't have plain yogurt, you can substitute Greek yogurt or sour cream. You can also add 1/2 cup of chopped crystallized ginger for a more intense ginger flavor.
